La Chancla is Doña Mari's comal and her son Beto's bad joke. She's from Guadalajara and has pressed every tortilla in this room since we opened in 2014; he named the place after the sandal every Mexican mother threatens with, and she let it stay — so nobody forgets who's in charge.
The birria simmers overnight, the asada goes over mesquite, and the salsa roja is made before anyone else arrives. If a dish has a story, tap it — I know most of them.
